Airport hotel restaurant wins prizes

Last week, chefs from around the country competed in Hotelympia, a trade exhibition specializing in foodservice and hospitality. Staff from one of Britain’s best airport hotels brought away gold medals in some of the main events.

The event combines education, competition and a lot of fun. Hotelympia kicked off with a 10 kilometre run to Canary Wharf, continued with guest speakers, presentations, and the UK Barista Championships.

Three chefs from the Radisson SAS Hotel Stansted Airport took home prizes from the event. The gold medal at the buffet centre piece competition went to sous-chef Palash Gomes who submitted a decorative carving for consideration. He was also award a gold medal for his work with fat. He won first place in the kitchen and larder category and a bronze award as well.

A fish dish comprised of brill, braised fennel, garlic anna potatoes, prawn and scallop ravioli, won executive chef Paul Tuthill a merit award.

Tim Shephard, the senior chef de partie also won a merit award for his lamb dish. The lamb was stuffed with spinach, kidney and port mousse, served with sweetbreads, confit potatoes and glazed baby carrots, and covered in a shallot and mint reduction sauce.

Tim Cordon, the general manager of the Radisson SAS Hotel Stansted Airport said: “To win any award at such a tough competition is a huge achievement but to bring home several is mind blowing. It further confirms the quality of our brigade and the talent we have here in Stansted and with Radisson SAS.”
